Broccoli and Ham Egg Muffins from Baby-Led Feeding
Makes 12 mini muffins
These savory little bites have a lot going for them. They’re ideal any time of day—breakfast, lunch, snack, or dinner. They’re portable: Tote them to daycare or just out and about. And they are also easily customizable. Instead of broccoli and ham finely chop 1¼ cups cooked veggies and/or meat to use up what’s in your fridge. If your mini-muffin cups are on the larger side, this will make 12 muffins; if the cups are smaller, you may be able to make more.
Directions:
1 Preheat the oven to 350°F. Spray 12 mini-muffin cups with nonstick cooking spray.
2 Stir together the broccoli and ham. Divide evenly among the muffin cups.
3 In a medium measuring cup, whisk together the eggs and pepper to taste. Pour the eggs over the broccoli mixture in the muffin cups, dividing them evenly.
4 Bake for 25 minutes, or until set. Cool in the muffin cups for 10 minutes. Transfer to a wire rack to cool. Serve warm or at room temperature.
Make Ahead: Refrigerate for up to 3 days. Serve cold, at room temperature, or briefly reheated.

I really love this book. As a first time mom it’s been my feeding quick reference guide multiple times a day. I never understood the worry of baby led feeding until I had to do it. I was so scared of my baby choking, especially when I didn’t know the difference between gaging and choking. Before I get into my reasons for liking this book, I know alot of comments are “it’s common sense what foods to feed a baby” but it’s actually not. I have cognitive impairment from a head injury so thinking off the top of my head and “coming up with variety” is very challenging for me. This book has information on how to safely start preparing food and feeding, it shows you how to cut babies food into safe consumable sizes (WITH PICTURES) for me I really love the suggested serving size chart. I was always wondering “how do I know if he’s getting enough nutrients”. It also had substitutes. It covers all the allergy information so you are prepared on what to look for if your baby does exhibit an allergy or sensitivity. I also love the recipes! Baby loves so many of the ones I’ve made so far.

Me encantó el libro!!! Está bien hecho, el material de las hojas, impresión e imágenes es muy bueno. El formato en que presentan la información es muy claro y aunque esta en ingles es fácil entenderlo y aprender más sobre la alimentación complementaria a libre demanda. En definitiva creo que es el mejor libro para empezar, te da muchos consejos, te explica las mejores formas de presentarle el alimento al bebé, los cuidados que debes tener y recetas para ir introduciendo más variedad. Compre en kindle uno de Begoña Prats pero me quedo a deber información y siento que con éste aprendà más y mejor. El único inconveniente es con el envÃo y manejo de Amazon MX… ya van dos libros distintos que compro y los dos han llegado algo maltratados y sucios, como si tuvieran tiempo en los estantes y la verdad es que el libro no es ni muy barato ni muy caro pero en definitiva uno espera recibir un libro NUEVO en las mejores condiciones posibles, agrego foto para que estén al tanto, por dentro no trae ningún daño por eso no le quito estrellas además que me parece uno de los mejores libros para aprender del tema.
